This healthy chicken and butternut squash recipe is one of my favorites! I meal prep this meal almost every Sunday so it’s in my fridge and ready for me to warm up for a quick and satisfying healthy lunch or dinner.
What makes this meal so fantastic (besides the fact that it’s delicious) is that it is essentially mess free! It requires one pan my friends! One pan meals are always the answer. You wanna know why? It’s cause no one likes to do the dishes. Okay so that’s not true, some people find doing dishes relaxing. But me (and my other new mama’s out there!) do not wanna spend our free time while baby sleeps doing the dishes. But we gotta eat right?? Cue the one pan meals.
All you gotta do for this recipe is throw the ingredients together, put it in the oven, and wait! It’s as easy as that. So now while you do the hardest part of this recipe and wait, you can do some relaxing and not worry about doing those dishes. You can make this dish even more easy by buying precut veggies at the store. Trader Joe’s has butternut squash cubes that can always be found in my fridge for quick meals like this one!
I love this recipe because you can add any of your favorite veggies and it always comes out delicious. I’ve been loving butternut squash lately, and asparagus is always a favorite! I enjoy tossing this dish with some fresh herbs and avocado at the end for a truly satisfying meal. Mmm I’m getting hungry just typing this up!
