The holidays have been over for a few weeks so the sugar overload from all the cookies, fudge, and chocolate-covered everything should be gone by now! That means it is time to share a recipe that is sure to satisfy your sweet tooth.
I love the combination of chocolate and orange, so thought what would be better than to merge them into a cookie. It was a great idea! But how about going one step further and taking two chocolate orange cookies and sandwiching (is that word?!) them together with a super easy ginger cheesecake filling! Brilliant!! (And delicious!!) ENJOY!!
Preheat oven to 300 degrees. Line a large, rimmed baking sheet with parchment paper; set aside.
In a medium bowl, place the cream cheese and 1/2 cup butter, mix to fully combine.
Add in the powdered sugar, a little at a time, mixing well after each addition.
Add in the ginger and 1/4 teaspoon salt, mix to combine. Refrigerate until ready to use.

Add in the egg and vanilla extract, mix to fully combine. Add in the flour, a little at a time, mixing well after each addition.
Add in the cocoa powder, orange zest and orange juice, mix to fully combine.
Shape dough into 1-inch balls, place 2 inches apart on prepared baking sheet.
Dip the bottom of a glass into granulated sugar and flatten each ball to about 1/4-inch thickness.
Place in preheated oven and bake for 18 minutes until edges of cookies are firm. Cool completely on a wire rack.
Lay half of the cooled cookies onto work surface, flat side up.
Spread approximately 1 1/2 teaspoons of reserved ginger cheesecake mixture onto cookies, top each with a second cookie, flat side down, forming a sandwich cookie.
