Cucumber Yogurt Dip or Persian Mast-O-Khiar – cool, creamy, and savory dip! Its a very healthy substitue for sour cream and onion dip

Cucumber Yogurt Dip or as it is known in Persian cuisine – Mast O Khiar – is a staple food in our household. We love it and eat it as a dip with whole wheat crackers or toasted pita bread.

Cucumber Yogurt Dip is also a refreshing cool condiment alongside a meat dish or a stew with rice. If you are lucky enough to be invited to a fancy Persian dinner, be sure and help yourself to this on your trip through the food line, because it’s always one of the first things to disappear! You can also add in chopped walnuts, raisins, and swap mint for the dill in the recipe.

One of the keys to success in eating for diabetes is finding acceptable substitutes for old unhealthy favorites – so if you are a fan of sour cream and onion dip, you may find this a very satisfying substitute!

I have always loved to cook, and the challenges of diabetes have not changed that. Healthy food can be beautiful, nutritious, and delicious, and doesn’t have to break the budget.
