I had family to feed – a hungry family. We all agreed that dinner had to be thrown together tonight. Nothing complicated. Nothing that required fancy ingredients. Nothing that would take more than an hour.

I had some meat. I had some veggies. I had a lot of potatoes.


Step by step method

  • Heat oil in a 5.5 qt pot.

  • Brown beef cubes in batches. Remove to a clean plate.

  • Over medium heat sauté onions, carrots, and celery for 5 minutes.

  • Add mushrooms and cook for an additional 5 minutes.

  • Return beef to pot. Cover with water, stir in bullion, salt, and garlic powder. Cover with lid and bring to a slow boil and cook for 50 minutes.

  • In a small bowl, make a slurry by whisking the flour with 3 tbsp water.

  • Add to pot and whisk continuously for 2 minutes.

  • Cook for another 5 minutes.

  • Serve over a few heaping spoonfulls of mashed potatoes.
