I had family to feed – a hungry family. We all agreed that dinner had to be thrown together tonight. Nothing complicated. Nothing that required fancy ingredients. Nothing that would take more than an hour.
I had some meat. I had some veggies. I had a lot of potatoes.
Heat oil in a 5.5 qt pot.
Brown beef cubes in batches. Remove to a clean plate.
Over medium heat sauté onions, carrots, and celery for 5 minutes.
Add mushrooms and cook for an additional 5 minutes.
Return beef to pot. Cover with water, stir in bullion, salt, and garlic powder. Cover with lid and bring to a slow boil and cook for 50 minutes.
In a small bowl, make a slurry by whisking the flour with 3 tbsp water.
Add to pot and whisk continuously for 2 minutes.
Cook for another 5 minutes.
Serve over a few heaping spoonfulls of mashed potatoes.
