These homemade oatmeal cream pies will surely take you back to your childhood memories…two soft oatmeal cookies with a dash of cinnamon are sealed together with a sweet and creamy buttercream.
Little Andy brings me to a place of nostalgia… Oatmeal Cream Pies….Zebra Cakes… Cosmic Brownies… My childhood is marked by these insanely delicious sweets that I absolutely cannot have in my house today! I wouldn’t be able to resist! However, I don’t think anyone should go without enjoying oatmeal cream pies, so I sought out to make a homemade version that anyone can make.
The task ahead of me was no easy one. I mean we’re talking about a childhood classic. Something everyone has enjoyed before. What I remember about these pies is the sweet oat-y smell you got when you unwrapped them and the thick layer of sweet cream in the center. I remember the cookie to be so chewy and almost melt-in-your-mouth soft. I couldn’t just make a flat ol’ oatmeal cookie and throw some ordinary cream in the center and call it a day. These cookies had to be perfect. They had to be chewy. Full of oats, cinnamon, and happiness. The cream had to be sweet and smooth with a hint of vanilla.
I’m here to tell you that these homemade copycat oatmeal cream pies were a hit! They came out just as good if not BETTER than it’s predecessor. Like the originals, these didn’t last long in my house!

- Preheat oven to 350 degrees. - Cream together the butter and sugars. - Add eggs and vanilla. Mix on medium speed for 3-4 minutes. - In a separate bowl, mix all of the dry ingredients. - Slowly add the dry to the wet and mix until well combined. - Line a baking sheet with parchment paper. - Use an ice cream scoop to place dough on the baking sheet. - Bake for 8-10 minutes. You want the cookies to be soft so don’t over-bake.
- Beat together all of the ingredients until smooth and creamy. Add more or less milk to get desired consistency. - Spread one cookie with a thick layer of your cream. Place another cookie on top to form a sandwich. Eat up! (:
