Sometimes the simplest things are the best! Here is a simple but delicious plum tart, with the addition of almond meal to make the dessert lower in carbs. Fortunately, plums and almonds taste wonderful together, so it’s no sacrifice to enjoy this low sugar dessert that is perfect for summer.

Step by step method

  • Preheat oven to 350F. Line a 9-inch round cake pan with foil; butter the foil well.

  • In a large bowl, cream the butter and sugar; add the almond meal and mix well.

  • Add the eggs and vanilla and beat well. Add the flour a little at a time, and mix only until just combined.

  • Spread the batter in the prepared cake pan. Place the plum slices or halves on top of the batter, then push them down into the batter.

  • Bake for 35-40 minutes, until the tart is a deep golden brown.

  • Remove from the oven. Allow to cool in the pan for 15 minutes.

  • Remove the tart by lifting the foil liner out of the pan; set on a rack or cutting board to finish cooling.

  • This plum tart is delicious served warm or cold. It looks very pretty sprinkled with a little confectioner’s sugar. You can also add a dollop of whipped cream sweetened with artificial sweetener, for an extra special touch.
