From pesto to kalamata olives to sun-dried tomatoes, this healthy low-carb dinner has all the delicious Mediterranean flavors! 

This recipe is perfect for summer- you can grill up a burger (or a chicken, turkey, or veggie burger!), or you can simply bake it in the oven like I did. I put a whole bunch of spinach on the plate in leu of a bun, and topped it with some crispy sweet potato fries that I cooked on the stove. I loooove sweet potatoes. Especially crisped up in some olive oil in the form of fries and tossed with salt and pepper! I pretty much am always looking for a way to sneak them into dinner. The combination of sweet potatoes and sun-dried tomatoes is one of my absolute favorite food combinations. If you haven’t ever tried it, I am EXTRA excited for you to try this recipe!

This isn’t exactly a picnic style dinner, but the hubby and I wanted to enjoy a relatively cool summer night outside on our grass. Our sweet baby Joel loves to lay outside and look up at the sky and trees while we eat! I can’t wait until he can enjoy some yummy Mediterranean food with mama and dada. For now his diet is a little less sophisticated (don’t worry Claude, you get to try sweet potatoes for the first time next week!!).
