I will be taking some time off from the blog for the month of August so that I can get my family ready for the new school year. But I will still be posting a recipe every week that works for Type 2 diabetics. AND I will be trying to keep the recipes easy too! Because sometimes life gets complicated, and that is when food prep should be simple.

Step by step method

  • Thaw the turkey, if frozen. Preheat the oven to 325°F. Place turkey breast bone side down, on a roasting rack in an ungreased 9×13-inch baking pan or dish.

  • Brush with 1 tablespoon of the melted butter; sprinkle with salt and pepper.

  • Insert an oven-safe meat thermometer into the thickest part of the breast, making sure tip of the thermometer does not touch bone.

  • For the glaze, in a small bowl, combine the remaining 1 tablespoon butter, the apricot spreadable fruit, mustard, and roasted garlic; set glaze aside.
