This Thai green curry dinner is loaded with all of my favorite green veggies and fresh herbs! With the help of Trader Joe’s Green Curry Simmer Sauce, this healthy dish can be whipped up in no time.

As many of you know, I love Trader Joe’s! I more often than not leave the store with far too many items that were not on my list, but I’m never disappointed by my random purchases!  One day when I was browsing the aisles, I spotted their Thai Green Curry Simmer Sauce. Now usually I like to make my own curry, but I don’t always have the time or all the ingredients on hand. So I thought why not to Trader’s Joes ready to go simmer sauce! I was so satisfied with this sauce, and I will definitely be buying it again. It has so much flavor packed in and a good amount of spice.

I added fresh basil from a friends garden, and I also used the herb to make fresh basil and parmesan scones! With a little bit of butter, these scones were the perfect side kick to my curry dish.

The hardest part of this recipe is spiralizing the zucchini (and it’s really not that hard!). This is the spiralizer I used for this recipe. If you don’t have a spiralizer, you can just as easily chop up the zucchini into cubes and the dish will come out just as tasty. I just like the illusion of eating noddles (; Zoodles have been my go to noddle substitute, and they really go well in this dish. If you are wanting a more hearty meal, serve this dish over a bed of rice. Yum!
