Heat olive oil in pan over medium heat. Add onions and cook until slightly brown. Add garlic.
Meanwhile, finely dice mushroom stems. Add to the onions and garlic. Cook for 2 minutes. Add panko crumbs, salt, pepper, and (optional) cayenne.
Place mushroom caps into a baking dish. Gently spoon filling mixture into the mushroom caps until level.
Bake until the filling turns golden brown – approximately 30 minutes. Top with (optional) broiled salmon.
Serve warm or at room temperature.
