This Thai curry is quick to make and way better than takeout! You’re gonna want to cozy up with a bowl of my version of curry this winter. Vegetarians and meat eaters are invited to dig in!

If you are a lover of Thai curry then you will LOVE this recipe I have for you today! It’s warm, comforting, full of spices, and loaded with vegetables. What’s not to love about a cozy and nourishing bowl of curry?! Served over a bed of quinoa, this is one of my go-to winter recipes to keep me warm and satisfied all season long.

Wanna know one of my favorite things about this recipe? It’s a one pot wonder. That’s right. One pot. You know what that means? While you are cozying up next to the fire with a big bowl of this curry, you don’t have to worry about a sink full of dishes because you only have to clean ONE pot! That’s an A+ recipe in my book.

I added some of my favorite veggies to this dish that I always have in the fridge or freezer: broccoli, zucchini, and onion. You can get creative here and add any of your favorite veggies that you always keep on stock. This dish would be equally as delicious with yellow squash, bell pepper, or carrots.

I think this vegetarian dish is perfect as is with the chickpeas, but feel free to add chicken or shrimp! I’m telling you, this is a very versatile comfort food that your whole family will crave.
